Ryu turned 1 today!!
Our little baby is growing up! Sorry, I haven't been posting much lately - Tim has had time off from work and if I have to hear "Are you 'forum'-ing AGAIN?!" one more time, I'm going to head to a divorce lawyer
Anyway - back to the more important stuff - Ryu's ONE year old today!!! Here's a tribute to our very hectic, but memorable year together:
At 7 weeks, the day we picked him up (Nov 27, 2007):

That was a yummy birthday, with loads of treats!
As for the pumpkin cookies, here's the recipe:
INGREDIENTS (Nutrition)
* 2 1/2 cups whole wheat flour
* 2 eggs
* 1 cup canned pumpkin
* 2 tablespoons peanut butter
* 1/2 teaspoon salt
* 1/2 teaspoon ground cinnamon
DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C).
2. Whisk together the flour, eggs, pumpkin, peanut butter, salt, and cinnamon in a bowl. Roll the dough into a 1/2-inch-thick roll. Cut into 1/2-inch pieces.
3. Bake in preheated oven until hard, about 40 minutes.
