My dogs eat raw meat from wild game all the time. Usually mix the meat and fat with the dog food. Really helps keep them warm and their coat is amazingly clean.

just the natural fat from the meat? because lots of the meat i'm buying is organ meat, which doesn't have much (or any) fat.

I cook and use a variety of protein sources. I rotate proteins every 2-3 days. Tilapia, Chicken, Turkey, Mahi Mahi, Duck, rabbit and venison. I combine it with sweet potatoes, yams, squash, or pumpkin. I add in greens (kale, collards, chard, beet greens) and then a variety of supplements.

Where do you typically find pumpkin in the off-season?

I only feed it when it is in season. I have given them canned pumpkin in the past but it seems to go through them too quickly. So I only do canned if they have eaten something they shouldn't and I want to flush it through. When it is in season, I roast it and then puree the flesh and drain it overnight. I try to keep enough for me to make a pie or two but then I keep the rest for my girls. I typically will do about a half dozen pumpkins at a time.

Any hunters or fishermen feed good 'leftovers' like fish heads or anything like that?

We feed raw and do some homecooking for our dogs. On super busy days we use grain free kibble. Premade is a fairly expensive way to feed, but I do enjoy Nature's Variety lamb medallions, stella and chewy's beef patties, hare-today.com's green tripe & spleen mix and whole ground rabbit, Sojo's Europa + stewed beef and chicken hearts.. Other meals are chicken necks egg yolk/shell and beef heart, or cornish hen and ground beef, or chicken back and whole fish and beef kidney. We also have them eat an organ (liver, kidney)/probiotic/veggie 'shake' 4x's a week. For treats, they get chicken feet, beef trachea, fish stix (like a bully stick) and dehydrated lung. We incorporate spinach, kale, sweet potato, broccoli, carrots, peas, honey, raspberries, blackberries (thanks Jess! I had no idea they'd like them!), apples, and butternut squash. We supplement with fish oil, solid gold seameal and brewers yeast/garlic tablets. We have some venison in our freezer from my grampa's deer this winter and some perch and bass from fishing last year. Ways to track what and how much you should feed: http://www.netrophic.com/misc/NewPersonalDogFeedingGuide.xls ^^a spreadsheet for raw feeding/meal planning/nutrient intake/amounts/etc^^ made by the dogster raw feeding group http://www.nutritiondata.com/ has all nutrition info for raw items (go on, type in 'beef heart' and check out all the info you get!)
