Probably wishful thinking, but could she skipping the teenage rebellion phase?
I'm not sure whether she's not there yet, or just putting it off. Mylie goes into her very short phases of being downright awful... But for the past month or so she's been FANTASTIC! Aside from her little adventure of running away the other night, she's been super obedient, playful and loving. Approximately when did your Shiba's go through their teenage phases? And what exactly did they do while in this phase? Is it helping that we're spending loads of time with her, doing additional and new training, and giving her tons of exercise and socializing?

I think you're doing the right thing by keeping her busy with new things. Just remember to stay consistent and it'll be over before you know it. :-)
Some dogs mature faster than others. However, you can't take it for granted, don't let you guard down. Some dogs will act up from time to time even at age 5. Chewing on things and stealing etc. can happen at any age. It really depends on the dog.

But SnF is right - a tired dog is a happy, behaved dog. Around 6 months, we started to take her on the 'big dog' walks, then around 9-10 months, we really started to push her. Now we have all three on the same walking schedule and in between all three tend to tire one another out so it all evens out now, but when it was just her and the ever-lazy basset - she was AWFUL!
