Oddly enough I have not yet seen or heard of a Shikoku with epilepsy here in Japan. But I have heard of several in Europe and the US. We don't have much data on the issue yet to be honest.

You can generally tell what color a pup will end up being when it is born. However they are quite a bit darker when they are first born, so you have to factor that into the equation.

I haven't hunted coyote before, but I could see a lot of ways that could go wrong with the Nihon Ken. The Nihon Ken are pretty agile, but they're not a big dog, and not particularly fast over distance.
