I love knitting. I have been knitting and sewing since I was a little kid. I actually made most of my formal dresses in high school (with the help of my expert seamstress mom). I now make my own curtains, pillows, and other random things.
My next project is making a custom duvet cover and canopy for the bed....
Here's the muffin recipe I use 8 ounces flour 4 ounces sugar 1 tsp salt 2 tsp baking powder 8 ounces milk 4 ounces eggs (which is about 2 large) 4 ounces butter melted (1 stick) 2 tsp vanilla extract (I added this to the original recipe)
Oven - 350 Combine all dry ingredients. Whisk or hand blend all wet ingredients until they're combined. Add dry ingredients and stir just enough to combine - don't over work the batter. If you're adding fruit add it now. Top with streusel topping. Bake for 30 minutes or until toothpick inserted near the center comes out clean (I usually only bake for about 22mins in my convection oven).
Topping - 1 cup all-purpose flour 3 tablespoons light brown sugar 2 tablespoons granulated sugar 1 teaspoon baking powder Pinch of salt 6 tablespoons unsalted butter, melted
In a medium bowl, combine the flour with the brown sugar, granulated sugar, baking powder and salt. Stir in the melted butter, then pinch the mixture until it forms pea-size clumps.
The topping isn't done by weight because I stole it from another recipe lol.
*When I use blue berries I like to toss them in sugar before I mix them into the batter. And when I'm making banana muffins I like to brown the butter first then add it to the 3 over ripe bananas and the vanilla and cream that with my stand mixer. Then I mash up 1 more banana and stir it in at the end. That way there's still some texture and there's also banana flavor throughout. I also eyeball how much fruit I use.

Wow, look at you mister baker! I pretty much only make banana muffins, but I've actually never had a better banana muffin in my life. My super-picky-has-a-comment-about-every-food-ever boyfriend was even speechless. lol. I love the spam by the way. Very cute pups.
